Power Packed Protein Bars
Ingredients:
1.5 cups old-fashioned oats, 1/2 cup ground
1 cup all-natural peanut butter
1/4 cup honey
1.5 scoops C4 Vanilla Bean Protein powder
4 tbls mini chocolate chips, divided
Instructions:
Prep your pan. Line an 8x8 pan (or similar size) with parchment paper, leaving a little overhang on the sides for easy lifting.
Mix the dry ingredients. In a medium bowl, combine 1.5 cups old-fashioned oats and 1.5 scoops C4 Vanilla Bean protein powder.
Add the wet ingredients. Stir in 1 cup all-natural peanut butter and 1/4 cup honey. Mix until a thick, sticky dough forms.
Fold in chocolate chips. Stir in 2 tablespoons mini chocolate chips (save the other 2 tablespoons for the drizzle).
Press into the pan. Transfer the mixture into your lined pan and press down firmly into an even layer (press hard—this helps the bars hold together).
Melt the drizzle. Microwave the remaining 2 tablespoons mini chocolate chips in a small bowl in 15–20 second bursts, stirring between each, until melted and smooth.
Drizzle + chill. Drizzle the melted chocolate over the top. Refrigerate for at least 1–2 hours (or until firm).
Slice + store. Lift out using the parchment, cut into bars, and store in an airtight container in the fridge for up to 1 week (or freeze for longer).
